3 Easy Recipes

Let's face it, some days you are so exhausted you don't even want to think about what to make for dinner. After working a full day, driving home and taking care of the kids needs, going home and sinking into the couch sounds heavenly.

Here are 3 easy recipes that can take the headache out of dinner.

Chicken Stir-Fry

Ingredients:

1 lb chicken breast cubed marinated in 2 tsp Sesame oil

Fresh veggies chopped I use:

Broccoli

Mushrooms

Carrots

Zucchini

Summer Squash

2 cups rice ( I use a rice cooker)

In a wok, add EVOO and heat to medium. Add veggies and let cook

In a separate pan preheat and add chicken, cook through

Once chicken is cooked add to wok

I add cashew pieces, chow mein noodles and soy sauce

This is a family favorite!

Steak Fajita

Ingredients:

1 lb steak

Red pepper

Green pepper

Yellow Pepper

Onion

Fajita seasoning packet

Fajita wraps

Optional: Salsa, sour cream, guacamole

In a frying pan add strips of steak

In a separate pan add EVOO and fry veggies then add fajita seasoning packet

Combine both pans when the steak is cooked to your liking, serve & enjoy!

Salsa Chicken

Ingredients:

3 chicken breasts

1 jar salsa

1 cup rice

1 cup water

Shredded cheddar cheese

Preheat oven to 350

Add rice, water and salsa to a glass baking pan and mix

Once mixed add the chicken breast

Cook for 40 minutes

Remove from oven and add shredded cheddar cheese

Cook for 5 minutes
